It was the last day of school for my son Tito about two weeks ago so I decided to surprise his teachers with some coconut cupcakes! These were really nice (If I do say say myself) and I know you will enjoy making them (for when school resumes ;). You know I don’t like complicated things, so here’s an easy recipe for you to follow, it take less than 45 minutes for you to make this. DIRECTIONS
- Allow butter and eggs to be at room temperature for at least 30 minutes.
- Preheat your oven to 350 degrees F and prepare your cupcake papers.
- In a bowl, add butter and whisk together with a whisk or electronic mixer for 1 minute (till light and fluffy).
- Gradually add sugar to the butter and keep beating for another minute.
- Add eggs, one at a time and beat till well combined.
- Add vanilla essence.
- Sieve flour, then add it gradually, while also adding the milk. See video on how to do this below. Add 1/2 cup of desiccated coconut.
- Once the batter has been properly mixed, use a small scoop and transfer the batter to the cupcake papers, in the cupcake pan.
- Sprinkle the left over desiccated coconut over the cupcakes
- Bake for 10 to 15 minutes.
- You can test for doneness, but inserting a toothpick, if it comes out sticky, keep baking, if it comes out clean then it is ready.
- Take out the cupcakes and allow to cook for 10 minutes.
