PLANTAIN CHIPS “KPEKERE” RECIPE – SISIYEMMIE

Fellow foodies, how’s the rumbling in your tummy? I promised to make a video about making plantain chips aka Kpekere and here it is! Clap for me! Clap for my mom too because she was the one who came around with a huge bunch of unripe plantain that would have wasted if she didn’t suggest making chips with them-it’s a great way to preserve plantain and nice for snacking + serving guest. So if you visit me in the next couple of weeks na kpekere you go chop belleful.

INGREDIENTS
  • Unripe plantain (you can use ripe plantain but unripe in my opinion is crunchier and healthier)
  • Vegetable oil (healthy alternative is to bake your plantain chips)
  • Salt (optional)
  • Pepper (optional)
  • Onions (optional but it is great for it’s flavour)

RECIPE
  • Peel plantain and slice with a sharp knife, make sure you slice as thin as possible.
  • Sprinkle some salt and pepper then mix together.
  • Heat a pan of vegetable oil, then add a whole/half bulb of onions- the onions adds a delightful flavour. 
  • When the oil is hot, add the chips one by one (to avoid clumping).
  • Fry for about 3-5 minutes.
  • Take out and drain.

Like I said earlier- the healthy alternative is to place the plantain in the oven to bake 🙂

  1. Very good snack, anytime I over-buy unripe plantain that is my best way to preserve it. Plus store it in ziploc bag in the cabinet portion of your fridge and it stays fresh as ever.
