INGREDIENTS
10 Red Bell Pepper
4 Green Bell Pepper
4 Scotch Bonnets
1 Large Red Onion
1 Cup Vegetable Oil
1 Kilo Turkey Wings
1 Teaspoon Curry
1 Teaspoon Thyme
2 Cups Turkey Broth
Salt to taste
Seasoning to taste
PREPARATION
- De-seed bell peppers and blend together with scotch bonnet till smooth.
- In a pan, fry the pre-cooked turkey till dark brown. Turkey gets softer in the post of stew so you need it to hold it's own.
- Transfer the oil used to fry the turkey to another pot for cooking the stew, it adds a lot of flavour.
- Heat up the oil, add onion and fry till translucent, add curry and thyme-the aroma is everything!
- Add the Pepper blend and fry till the oil floats to the top - that's how you know it's cooked. Click HERE to see how it should look.
- Add Turkey broth or water but it is more flavourful to use broth.
- Add the fried turkey and taste the stew to make sure seasoning is okay, if it's not enough (because there is usually seasoning in the broth) then adjust the taste to your liking.
- Allow to simmer for 2 minutes.
- The whole stew process takes about 40 minutes, you need to be patient and constantly stirring the stew to avoid it burning. This stew splashes a lot, so be sure to cover the pot.
