My love for Mango brought this recipe to life, and since we are in Mango season, make we carry go! Mangoes go well with a lot of dishes; chicken, in ice cream, cakes, I've even toyed with the idea of making it as a salad etc... I love the sweetness! This chicken is a lollipop because it looks cute like a lollipop-there's a method to it, watch the video below to find out how to make your drumsticks into a lollipop! INREDIENTS
3 Mangoes
2 Ata Rodo aka Habenero
1/2 Onion
1 teaspoon Salt
1 Seasoning Cube
6 Chicken Drumsticks
4 tablespoons Olive Oil
1 teaspoon Thyme
1 teaspoon Curry
1 long Green Chilli
PREPARATION
- Wash and turn your chicken into lollipops by cutting off one end and pushing the bone all the way to the other end (see video to understand better)
- In a blender, add Mango pulp, habanero pepper, curry, thyme, salt, green chilli, olive oil, onions, seasoning cube and blend till you have a paste.
- Add the mango marinade to the chicken and leave in the fridge for 3 hours or cook immediately.
- Add chicken to a baking tray and place in a pre-heated oven for 35 minutes.
- Take out and allow to rest.
