GOOD FRIDAY MEAL : FREJON!

Frejon is a meal eaten on Good Friday mostly by Catholics in Lagos. The story is that Frejon was imported by Nigerians who went to Brazil back in the day. It is made ideally with Black Beans- Ewa Ibeji but that can be hard to find so try black eyed beans, Coconut Milk, a few spices and typically served with fish stew /Garri! INGREDIENTS
1 Cup Black beans or black eyed beans ​
2 Cups Coconut Milk
4 Cups Water (enough to cook beans till very soft)
1 tsp Ground Cloves
2 tbs Ground Sugar


PREPARATION
  • Boil beans till very soft takes between 4 to 5 hours (use a pressure cooker because it would take less time)
  • Blend Place beans in blender, add coconut milk and blend beans till very smooth
  • Add blended mix to pot and stir continuously, add coconut milk gradually till you get desired consistency.
  • Add cloves, sugar and keep storing for 10 minutes.
  • Serve with fish stew and garri.

  1. I'm so sorry. Been stalking your recipes for a long time and one of the ingredients you use is coconut milk. Biko, which one is coconut milk? Is it the water in cocnut or the coconut grinded and mixed with water? Help my ministry biko

  2. Never heard of this recipe before oo @emete smart, its grated or grinded coconut mixed with water thats where you get the milk, not from the water in the coconut. #sisiyemmieblogaddict#
