I don't need to remind you about the cost of tomatoes, as a sharp babe I decided to fashi dat side and eat my rice with other sauces-tomato stew is not the only option you have available. I posted this stir-fry photo a few moths ago on my instagram page-now is the perfect time to share one of my favourite recipes: chicken stir-fry. So easy and you only need a few ingredients that you can get from Shoprite, and like I said, it's perfect with rice, especially basmati rice. INGREDIENTS
2 Red Bell Peppers
2 Yellow Bell Peppers
1 Green Bell Pepper
Carrots
Green Beans
Half an Onion
Sesame Oil 3 tbs
Oyster Sauce 1/2 cup
Light Soy Sauce 1/2 Cup
Stir fry Chicken
PREPARATION
- Slice the peppers, carrots and green beans into strips. Some people like their Chunky, whichever works for you.
- Heat a non-stick pan (or wok) then add a drizzle of vegetable oil, enough to grease the pan. Now add your chicken strips. I got these Chicken strips from Shoprite, they have beef and chicken in strips. It makes the whole job easier.
- On high heat, fry the chicken constantly stirring. It takes about 5 minutes to brown. When it is brown, take it off the pan.
- Using the same pan, place it on the cooker and drizzle some more oil. Add your vegetables and peppers, stir fry, just like you did with the chicken.
- After 2 minutes, add the chicken back to the pan , add the soy sauce and the Oyster sauce. Combine well.
- It shouldn't take more than 3 minutes and it should be ready. You want your vegetables still crispy not soggy and over cooked.
- Serve with rice or whatever you choose!
