HOW TO PREPARE LEPA-FRIENDLY UNRIPE PLANTAIN PORRIDGE

Hello my #fitfambam and any other person that likes delicious food as much as I do! What's rumbling in your tummy today? I'm sharing my Unripe Plantain Porridge Recipe with you today and you will love it if you try it! I've never really liked unripe plantain but when I make it like this or as Plantain Chips (Kpekere) it's irresistible! Bobo said to me over Skype "That's the first thing I want to eat when I get back home"! It will be here waiting for him :D


INGREDIENTS
Unripe Plantain
Vegetable of your choice (lately I use Uziza leaves for everything!)
Onions
Pepper (Ata Rodo)
Palm Oil
Chicken Stock (optional)
Smoked fish
Smoked Chicken (|Optional)
Ground crayfish
Big Crayfish
Salt
Knorr Cubes
Cameroon Pepper

PREPARATION
Put a pot of boiling water on the cooker, add chopped peppers, onions, shredded smoked fish, shredded smoked chicken, a spoonful of palm oil, salt, know cubes, crayfish, chicken stock and allow to cook for about 5 minutes.

Chop up your plantain into cubes and add to this boiling pot, cover and allow to cook for about 20 minutes or till your plantain is soft as you like.

Next you add some crayfish again (this gives extra flavour), add your sliced vegetables cover and allow to cook for like 5 minutes.

I love to mix it all together so it's a bit mashy...you can serve like that or mash yours. 

It's seriously that easy to prepare! Try it and let me know.
