I love Coconut rice... I wont claim to be an expert with this recipe but I dey try. LOL. I mashed the rice up after cooking cos i like it that way. I like my beans mashed too. Don't say 'eeeew'
Ingredients
2 cups of rice
2 tins of coconut milk (that's was the best i could do)
2 Onions
1 Tomato
2 Knorr Cubes
Vegetable Oil
1 Ata Rodo
Fresh Prawns
2 Table spoons of blended crayfish
2 smoked peppered mackerel
Green Peas
Salt to taste
Method
Per boil rice and cook with the coconut milk till cooked add salt and knorr cubes. Chop all vegetables and stir fry with seasoning. Pour into the pot of rice and mix. I put in a part of the smoked mackerel and used the rest to garnish my rice as per i no get Chicken for house. Finito. Please if you have a better recipe for Coconut rice please drop it in the comment box as I am still upgrading this my own. My brideprice has just been upped by £5!!! Yay!

@Franni thanks! lol. You can use 2 or 3 coconuts and to get it out, you blend it with water and sieve the juice out...or you just buy coconut milk from the grocery store like i did if you can't find coconuts!
